Last week was busy.
I was so tired on Sunday Morning that I literally just started crying.
For.No.Reason.
My poor husband had no idea what to do.
In the 1 1/2 years we've been together,
this is the first time He's had to experience it...
So he did was all good,
Slightly Freaked out Husbands do.
He laid down on the bed next to me and just let me cry.
Then when I was done crying,
He just laid there with me some more.
And when I started crying all over again ....
It was pretty bad.
I'm not one of those people than can Go, Go, Go.
I get tired.
I get cranky.
I need a BREAK!
And then this week happened.
Gah! This week has been insanely busy.
And we've had some crazy stressful things, that I can't blog about happen at work!
It has been exhausting. I'm ready for it to be over.
I haven't cooked, at ALL!
We worked late several nights this week,
And came in early more than once.
January has been our busiest month, and we still have 5 buying days left.
We.Are.Tired!
Monday night we had left over Chicken Enchilada Soup.
Tuesday & Wednesday Night we worked so late we just went to the Mexican place by where we work.
Thursday night, we were both so tired that the Mr ate PB&J, and I had more Enchilada Soup.
Friday night--we went out with his family for his Mom's birthday.
Mesquite Chophouse. DELISH.
(Great Service too!)

So My Mealing Planning for the next 2 weeks was fairly simple,
I just had to add in 5 dinners!
New Recipes on my Meal Plan:
Turkey Sausage Quinoa
Chicken & Mushrooms in a white wine sauce
Chicken Jambalaya
Asian Skillet Shrimp & Sugar Snap Peas
Basque Chicken
Angel Hair Pasta with Eggplant-Tomato Sauce.
That's 3 new recipes a week!
I'm also going to remake the Chocolate Cherry Cupcakes. They tasted good, they just looked awful.
I didn't have a cupcake pan...So I improvised with some round cake pans.
Epic Fail.
And then I tried to use Fat Free Cream Cheese for the frosting.
Let me tell you people. Cream Cheese is NOT meant to be Fat Free. It wouldn't set up...
So Maybe I'll have some blog worthy cupcakes this week.
And maybe the Mr. won't eat 14 of them in 2 days.
True Story.

I made a Cheese Steak Pizza for dinner Last Saturday night.
It was Scrumptious,
And I made it semi-weight watchers friendly.
I'm remaking it tonight--
Hopefully it will be a little more friendly to my points ;)
And maybe when the Mr. eats 3/4 of it again,
he won't fall over with a heart attack!

My Ring hasn't been re-dipped...well, ever.
So we dropped it off on Sunday.
I MISS MY RING!
My hand feels seriously naked.
But--I won't get it back until next weekend!

We {hopefully} have a newbie starting sometime next week.
People. THIS IS HUGE. We are about to raise our employment by 25%.
BAM!
Seriously though.
It's a pretty big deal -- I'm looking forward to it.
I know the Mr. & our 1 other employee won't mind the help either!
Hopefully he works out...
